Tunnel ovens must constantly exhaust air to prevent food from drying out during baking, but this amount can't be set arbitrarily. What is the specific exhaust volume for this equipment?
How to determine the exhaust volume for a tunnel oven's circulation system centrifugal fan: 1. Air volume is estimated based on the building's capacity. For example, if the total area is 600 square meters, multiply it by the building's height to get the capacity. Then, determine the air changes per hour and multiply it by the capacity to get the total fresh air volume required per hour. 2. To calculate cooling capacity, multiply the total air volume by (outside temperature - required temperature), then by the air dew point temperature and other factors, plus the heat (cooling) rejection of the building's structural elements to obtain the desired value. 3. Position-based ventilation is not ideal for fresh air distribution, as restaurant kitchens typically have high air volumes, blowing directly toward the chef, which can be uncomfortable. Centralized exhaust can be used, located in open areas or hallways. Position-based ventilation is more suitable.
